How is the xG table calculated?

The xG table totals every team's expected goals for and against across the season and re-scores each match on chance quality instead of goals. Figures are season or window totals, not per game. Expected goals measures the quality of a chance as the probability that a shot of that type is scored, so a shot worth 0.5 xG should be scored about half the time.
